nonstick cooking spray
12 large organic eggs
1 cup fresh spinach (chopped)
3/4 cup cherry tomatoes (quartered)
1/2 cup onion (finely diced)
1 teaspoon G-Town Seasoning
sliced avocado for serving
salsa or pico for serving
crumbled feta for serving
Preheat oven 350 degrees. Grease a muffin pan with nonstick pan.
In a large bowl, whisk together the eggs.
Stir in spinach, tomatoes and onions with G-Town Seasoning
Divide the mixture evenly between 12 muffin pan cups. (a spring-form ice cream scoop helps.)
Bake the muffins for 20-25 min or until its fully cooked
Remove muffins from the oven and let cool. Hey will deflate evenly. Use a knife to help remove muffins from the pan, if needed.
Place avocado slices, feta and salsa on top and enjoy.
You can always substitute the Spinach for broccoli and even add bell peppers. Get creative and switch it up each week.
